Zucchini Egg Pancakes

Zucchini Pancakes

  • 2 eggs
  • 2 C grated zucchini
  • 1 C diced onion
  • 2 Tbs finely sliced bell pepper
  • 2 garlic cloves
  • salt and pepper
  • 1 tsp fresh oregano
  • 1 Tbs fresh parsley

Directions: beat egg and add zucchini, pepper, garlic and fresh minced herbs. Mix and heat pan. Make small pancakes, no bigger than 3 inches across. Serve with a fresh salsa!
