Stuffed Spaghetti Squash

 

  • 1 medium sized squash
  • 1-2 lbs burger
  • 1 medium onion
  • 4 garlic cloves
  • 2 inch piece of grated ginger
  • 1 tsp crumbled sage
  • 1 tsp thyme
  • 3 C grated carrot OR
    • 2 C carrot + 1 C grated zucchini
  • 2 tsp curry powder
  • 2 tsp salt
  • optional: pre-cooked brown rice if a filler is needed.

Directions:

  1. Cut squash in half and place in glass baking dish with open end down.
  2. Add 2 inches of boiling water to pan.
  3. Pop into oven and bake at 375F for 1 hr+.
  4. When squash is almost done, begin frying up burger.
  5. Sprinkle with herbs. Dice onions and garlic, adding ’em to the meat.
  6. Finely grate ginger and add to frying pan. Add grated zucchini and carrot.
  7. Spice with curry and salt. Add rice if deemed necessary.
  8. Cook until meat is done and vegetables have softened.
  9. Remove squash from oven and scoop out seeds.
  10. Fill the cavities with hot meat mixture. Serve immediately
