Stewed Chicken

This recipe is especially wonderful for old birds who have lived a good life on your farm or homestead and are now going to help nurture your own in one more way.

Stewed Chicken (water base)

  • 1 whole, 3-6 lb cleaned chicken (skinned is wonderful)
  • water to cover
  • 1 Tbs salt
  • 1 bay leaf
  • 1 Tbs dried oregano
  • 6 garlic cloves
  • 1 large onion
  • 1 Tbs chili powder
  • 6 black peppercorns

Directions: set chicken in pot and add spices. Pour water over until it covers the bird by 2-3 inches. Set to simmer for 6-8 hrs, until meat is tender and falling off bones. Be certain to check it every couple hours for evaporation. Add water as needed. Note: this recipes works wonderfully if you have a wood stove!

Pull out chicken and remove bones, placing ’em in freeze bag for making broth later on.  Toss meat back into pot and add vegetables of choice (carrots, potatoes, corn, etc) and simmer until soft. Serve hot with bread.
