Stewed Chicken (with Tomatoes)

Tomatoes are naturally acidic and will break down the toughness of meat better than plain ole’ water! If you are a fan, serve rice with chicken and tomato sauce!

Stewed Hen with Tomatoes

  • pieces from a thawed 3-6 lb chicken (recipe is wonderful for old birds)
  • 4 C tomato sauce (omit if using 8 C diced)
  • 4 C diced tomatoes (or 8 C diced)
  • 8 garlic cloves
  • 1 med-large onion
  • 1 Tbs salt
  • 3 tsp curry powder
  • 1 Tbs oregano
  • 1 Tbs parsley
  • 1 Tbs thyme

Directions: place chicken in crock pot, breast side down, or divide into sections. Chop garlic and onion. Stir into tomatoes with herbs and spices. Pour over chicken and turn to low for 8-10 hrs. Test for tenderness. Serve with rice or noodles, using tomatoes as a sauce.

Note: if making the above recipe on a stove top, follow above directions but add water until bird is covered by at least 1 inch. Don’t worry! It’ll boil off. Let it go for 8-10 hrs, being sure to check water level every 2-3 hours if mildly simmering. When done, remove bird, de-bone and serve with rice.
