Scotch Eggs (high protein)

Scotch Eggs

  • 2 lbs thawed venison burger
  • 1/4 C chopped onion
  • 2-3 garlic clove
  • 1 Tbs dried chives
  • 1 tsp thyme
  • 1 tsp salt or heramare
  • (optional) 1 tsp prepared mustard
  • 8 hard boiled egg
  • 1/4 C cornmeal with dash of salt & pepper

Directions: mix herbs and spices into meat, then divide into 8 equal sized portions. Flatten. Place cornmeal in bowl and quickly dip peeled egg into water and roll in cornmeal. Place on flattened burger and mold around egg, keeping consistent thickness. Place in lightly greased pan or dish with a lid. When through with all 8 eggs, cover with lid and bake at 400F for approx 25-30 min or until meat is done.

These are delicious when served with biscuits and gravy! Equally nice protein treats when on the road!
