I love the tang and zip of plum sauce or jam. We also love plums and plum syrup for our pancakes! But there are times when the surplus of plums just needs to be canned and put away. Sometimes I don’t have energy to boil down a plum sauce. So…

I can ’em in halves!

Yep, soft halves that can be added to crisps, used in muffins or a layer cake and I get a nice plum syrup from the deal!

Plum Halves in Syrup

  • 12 lbs plums
  • 10 C water
  • 3/4-1 C honey
  • 3-4 cloves

Directions: prepare canner and set to boil. Combined water, honey and cloves in a smaller pot. Set to boil. Wash plums, halve and remove seeds. Place sliced side down in jar and tightly pack until full. When through, fill jars with hot syrup. Seal and process according to altitude. Makes 7 quarts.
