While it goes by the name “bread” this recipe resembles a cracker. It’s easy to make and a tasty gluten free treat!
Millet Pan Bread
- 3 C water
- 2 C cooked millet, pureed
- 3 C oat flour
- 2 tsp baking powder
- 1 tsp salt
- (optional) 1/2 C raisins + 1 C finely diced apples
Directions: puree millet in blender with 1 C water. Dump into bowl adding extra water, oat flour and baking powder. Also add apples/raisins if desired. Mix well. Line a cookie sheet with parchment paper and pour paste onto it. Spread evenly in the pan. Bake at 375F for 45 minutes, or until top is crusty. Cut into squares and dabble with maple syrup or homemade jam.
