Fruit juices (and in this case blackberries) make a delicious cordial and natural sweetener to many a dish in any home! Poured over ice for a refreshing drink, added to pancakes, combined in fruit juices or used in baking…any home would benefit from the goodness!
- 2 gallons sun-ripened blackberries
- 2/3-1 C honey
- (optional) 2-3 cinnamon sticks and 6-8 cloves
Directions: Place berries in pot and lightly mash to release juices. Set on stove top and bring to a simmer. Stir often. When berries seem to break apart (15 minutes), send through a cone strainer or pour into muslin cloth. Strain out seeds and return juice to heat. Simmer for approx 60 min, adding honey and cinnamon/cloves (if desired). When slight thickening begins to happen, remove from heat. Pour into pint jars and process in a water-bath canner.
Just over 2,000 ft in elevation I processed my cordials for 10 minutes.
