While porridge is a softer, gummier version of an oat dish, baked oatmeal has firmer texture and resembles a oatmeal cake. It is cut into squares and can be held in one hand when eaten.
- 2 C rolled oats
- 1 1/2 tsp baking powder
- pinch of salt
- 2 1/4 C milk (dairy, coconut, almond)
- 4 Tbs maple syrup or honey
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 4 Tbs chopped nuts
- handful of raisins or dried fruit
Directions: grease a 8×11 pan with coconut oil. In bowl, combine dry ingredients, then incorporate wet, starting with milk. Mix well, pour into pan and pop into oven. Bake at 375 for 30 minutes. Pop out, cut into squares and serve hot!
